Boef Salad

Since the we are in the festive season, it means there is a lot of festive food as well. Every Christmas and Easter I like to make a traditional Romanian Salad that originates from Russia and has been adapted into the Romanian  Culture.

Beof Salad or Salata Beof (in Romanian) is a salad that is served cold during Christmas in Romania. Honestly speaking, this salad is very cooling and refreshing to eat, especially if you live in a tropical country like me.

Every Romanian has their own recepie for this salad, and I respect that. But I have my own adapted version because of the ingredients I have available.


  • 7 Medium to Large Potatoes
  • 5 Large Carrots
  • 2 Chicken Breast (Beef or you can leave it out if vegeterian)
  • 1 Jar of Pickles
  • 250g of Peas (if you have in the house, I only put if there is some, otherwise i skip it)
  • 1 Jar of Mayonnaise
  • 1 Jar of Mustard
  • Salt
  • Pepper



Boil the potatoes, carrots, peas and chicken breast until the fork can go through. Then chop everything into small cubes (some people like to chop into bigger cubes others prefer smaller, but it is up to you).

Add all the chopped ingredients into a large bowl and add a few spoons of mayonnaise, and start mixing. Now slightly less mustard, and keep mixing. The mixture should become sticky.

Now taste the salad and add more mayonnaise or mustard if you feel it needs some more. Also add some salt or black pepper after your taste. Refrigerate the mixture for a few hours (2-3 hours or even over night) before decorating and serving.

For decoration, take some mayonnaise and cover the top and add different ingredients that you have around the kitchen. Some people use the peel of a tomato to make a rose and some parsley as the stem, others take red pepper and make flowers and green pepper as the stem and others take boiled eggs and make a snowman :). Honestly, it is up to you to get creative, otherwise you can leave it simple as well.
